Title: Potato Apple Salad
Categories: Salad Side dish
Yield: 4 Servings

1lbSmall Red Potatoes; cubed
1 Apple; peeled cored and cubed
1 Stalk Celery; diced
2 Green Onions; coarsely chopped
1/3cWalnuts; toasted and chopped
2/3cSour Cream
3tsRaspberry Vinegar
  Salt
  Pepper

Boil potato cubes in lightly salted water until just tender, 15 to 25 minutes; drain and cool. Combine potatoes, apple, celery, onions and walnuts. Plump raisins in boiling water for 3 seconds; drain and add. Combine sour cream and raspberry vinegar and a small amount of salt and pepper. Dress potato mixture with this; chill. Taste for seasonings.
